Abstract:
The present invention makes it possible to provide a high-protein milk raw material having good flavor. A liquid, high-protein milk raw material according to the present invention can be produced by preparing a milk fluid from a milk raw material and subjecting the milk fluid to concentration processing by a nanofiltration membrane.
