Abstract:
The present invention relates to the field of methods for purifying fatty acid ethyl ester. According to the present invention, a method for obtaining ω-3 fatty acid ethyl esters such as EPA and DHA in the form of a high purity product and in high yield is provided. In this method, an oil or fat ingredient comprising EPA and DHA is treated with a lipolytic enzyme, ethyl-esterified as required, and fractionated into a glyceride fraction and a free fatty acid fraction, then a fraction rich in EPA ester and a fraction rich in DHA ester are obtained from each of the fractions, the fraction rich in EPA ester being purified to prepare high purity EPA ester and the fraction rich in DHA ester being purified to prepare high purity DHA ester.
