Abstract:

Disclosed is a method for efficiently producing a lipid component by extraction from crustacean shells. A method for producing lipid characterized by comprising compressing the whole or a portion of crustacean shells to obtain a compressed liquid, heating the compressed liquid to a temperature at which proteins contained therein coagulate, performing solid-liquid separation to separate a solid component containing a lipid component from an aqueous component containing a water-soluble component, subjecting the resulting lipid-containing solid component or a lipid-containing dry matter obtained by drying the solid component to water-washing, dehydration and/or drying, and extracting lipid from the lipid-containing solid component or lipid-containing dry matter.
