Abstract:
Provided is a novel method for producing liquid fermented milk that goes down smooth, has dense and smooth consistency, and gives a rich sensation without using stabilizers and thickeners. This method for producing liquid fermented milk enables production of liquid fermented milk containing 2.5% or more of milk protein, containing 25% or more of whey protein in the milk protein, and having a viscosity at 10°C of 100 to 700 mPa·s. Accordingly, liquid fermented milk that goes down smooth, has dense and smooth consistency, and gives a rich sensation can be produced without using stabilizers and thickeners.
