Abstract:
The present invention relates to a method for producing a lysophospholipid-containing composition in which a phospholipid is decomposed with phospholipase A. The method is characterized by comprising a mixing step, a phospholipid enzymolysis step, and an enzyme inactivation step, wherein: a value which is exhibited by the lysophospholipid-containing composition and which is calculated as by subtracting an L1 value from an L2 value is positive, where the L1 value is the brightness value of the composition and the L2 value is the brightness value of an oil-in-water emulsion obtained by dispersing the composition in 100 times the amount, by mass, of pure water; in the mixing step, the total used mass of the phospholipid, oil/fat, a polyalcohol, pure water, and phospholipase A is not less than 90 mass% with respect to the total used mass of raw material and phospholipase A; the content of the polyalcohol in the raw material is 0.4-3.0 times, by mass, the content of the pure water; the content of the phospholipid in the raw material is 0.07-0.5 times, by mass, the total content of the phospholipid and the oil/fat; and the total content of the polyalcohol and the pure water in the raw material is 0.25-4.0 times, by mass, the total content of the phospholipid and the oil/fat.
