Abstract:
It is intended to provide a method for chemically modifying a structure produced from gelatin or the like using a chemical compound with low volatility without dissolving the gelatin, and a method for crosslinking biopolymers for producing a biopolymer with high strength (high degree of crosslinking). According to the invention, a method for producing a modified biopolymer including the step of reacting a structure produced from a biopolymer with a compound which has a melting point of 50°C or higher and is in a solid state at a humidity of 50% or higher, and a method for crosslinking biopolymers, including the step of treating biopolymers with a crosslinking agent, characterized in that the concentration of the crosslinking agent in a reaction mixture is from 1.0 to 10% by weight, and crosslinking is carried out in the presence of an organofluorine compound are provided.
