Abstract:
[PROBLEMS] To provide a method for producing a monatin having a configuration in 2-position of R configuration or a salt thereof through the isomerization of 2-position of a monatin having a configuration in 2-position of S configuration. [MEANS FOR SOLVING PROBLEMS] A method for producing a monatin having a configuration in 2-position of R configuration, characterized in that it comprises a step of effecting an isomerization of 2-position of a monatin having a configuration in 2-position of S configuration in a mixed solvent from water and an organic solvent in the presence of an aldehyde, and then a step of crystallizing a monatin having a configuration in 2-position of R configuration or a salt thereof.
