Abstract:
The present invention addresses the problem of providing a method for effectively producing a target oil/fat that is rich in triglyceride, by using liberated by-products such as fatty acid ester originating from starting material oil/fat that is separated from the target oil/ fat efficiently after the reaction when producing the target oil/fat that is rich in triglyceride by a transesterification reaction using, for example, oil/fat and fatty acid ester as starting materials. In a complex reaction system that includes a plurality of reaction systems for producing a target oil/fat composition that is rich in triglycerides by a 1,3-position specific transesterification reaction between the starting material oil/fat and starting material fatty acid or lower alcohol ester thereof, liberated fractions of the fatty acid or lower alcohol ester thereof originating from 1,3 positions of the starting material oil/fat are separated from a reaction product after the 1,3-position specific ester exchange reaction of each reaction system, and the fractions are used as a part of or the whole of the starting material fatty acid or lower alcohol ester thereof in another reaction system.
