Provided is a coating composition (a liquid batter and bread crumbs) which is suitable for producing a fried-like food by heating with superheated steam. Also provided is a method for producing a low-caloric non-fried food which achieves both the crispness of a coating and the deliciousness of a content food material. A method for producing a non-fired food, comprising coating a food material, which has been subjected to a heat-moisture treatment, with a liquid batter and bread crumbs in this order and then heating the same with superheated steam at 230-250°C, characterized in that, before heating, the moisture content of a coating composition (the liquid batter and bread crumbs) is maintained at 33 wt% or lower.
