Abstract:
Provided is a method for producing a nonaqueous paste-type fat-based food, whereby appropriate saltiness and sweetness can be obtained in a well-balanced manner and a high productivity can be achieved. The method for producing a nonaqueous paste-type fat-based food comprises mixing a fat base, which comprises 90% or more of a high-melting fat having an elevated melting point of 40-60oC, at a material temperature of 0-35oC with sodium chloride having an average particle diameter equal to or larger than 0.5 mm and sucrose having an average particle diameter equal to or smaller than 0.2 mm.
