Abstract:
The present invention provides, inter alia: a method for producing an antibacterial composition, the method including producing a melanoidin by heating a reducing sugar selected from xylose or ribose, and an amino acid selected from phenylalanine or proline, and blending the melanoidin as an active ingredient; an antibacterial composition comprising a melanoidin produced as a reaction substrate from phenylalanine and xylose or ribose, and/or a melanoidin produced as a reaction substrate from proline and xylose or ribose; and an antibacterial composition comprising a compound represented by the given formula or a salt thereof. [In the formula, R1 to R10 each independently denote hydrogen (H) or a C1-5 branched or linear hydrocarbon group that may be saturated or unsaturated.]
