Abstract:
Provided is a method for producing a pulverulent fat and oil by heating and drying an oil-in-water emulsion containing an oil and fat and a diluting agent, wherein the foul smell and flavor expression (off-taste) caused by a highly unsaturated fatty acid and a deterioration smell caused by a highly unsaturated fatty acid preserved for a long time can be minimized, and the flowability and in-water solubility of the powder are excellent. Further provided is a method for producing a baked product. The present invention is characterized in that an oil-in-water emulsion is heated and dried, said emulsion containing: (A) an oil and fat containing an oil containing a highly unsaturated fatty acid and an oil having an iodine number of less than 50, the solid fat content at 30˚C being 8% or higher; and (B) a diluting agent.
