Abstract:
Provided is a method for producing a purified tea extract, wherein it is possible for both the non-polymeric catechin yield, and the removal rate of gallic acid to be at high levels. The method for producing a purified tea extract is characterized in that a tea extract containing an aqueous organic solvent solution is brought into contact with an anion-exchange resin.
