Abstract:
Provided is a method for producing quick-cooking rice that exhibits no loss in flavor, retains more functional components and nutritional value compared to existing rice, and can be cooked without requiring washing or soaking treatments. Water is added, to brown rice having a pre-adjusted moisture content, in a minute amount that does not cause breakage. The brown rice to which water was added is super-heat-treated by being subjected to super-heated steam that is super-heated to 100°C or higher. The brown rice is subsequently cooled and dried, and the moisture content thereof is adjusted, after which the brown rice is milled.
