Abstract:
The present invention relates to a method for producing rice for lowering blood glucose levels and, more particularly, to a method for lowering blood glucose levels by permeating brown rice with a Momordica charantia mixed solution and then drying the same at a low temperature. The present invention, so as to produce brown rice for lowering blood glucose levels, is carried out by drying brown rice so as to have a water content of 10%; adding 30 g of Momordica charantia to 1 liter of water, brewing the same at 60℃ for 20-24 hours, and then filtering out the solids to make a Momordica charantia solution; adding 15 g of water-soluble silk amino acid, 10 g of Curcumae longae powder, 3 g of water-soluble dietary fiber (nondigestible maltodextrin, Fibersol-2) to the Momordica charantia solution to prepare a Momordica charantia mixed solution adding 1 kg of the brown rice to the Momordica charantia mixed solution and soaking the same at a low temperature of 40-50℃ for 5-7 hours; removing the soaked brown rice from the Momordica charantia mixed solution and draining the same to have a water content of 50%; and putting the drained brown rice having a water content of 50% into a dryer and drying the same at a low temperature of 20-60°C for 8 hours so as to have a water content of 12%.
