Abstract:
The present invention relates to a method for producing rice wine improved by the use of paprika and to rice wine produced thereby, and, more specifically, a method for producing paprika rice wine is provided which overcomes the problems of inconsistency and poor reproducibility of the wine taste and provides a standardised process and which at the same time increases functionality as it contains the carotenoid pigments contained in paprika. The rice wine produced in accordance with the method of the present invention can also provide a health-promoting effect as not only does it have a higher content than general grape-based wines of the beneficial amino acids and organic acids found in rice, but it also facilitates the ingestion, in the form of a processed product, of paprika which contains vitamin C and carotenoid components which have outstanding anticancer and antioxidant effects.
