Abstract:
A method for producing saccharified moromi (mash) wherein a portion of moromi for saccharification is withdrawn into a tank, heated, then returned and mixed with the remainder, said method being characterized in that the withdrawn moromi for saccharification is heated in a copper tube. A beer using the saccharified moromi obtained by the production method according to the present invention shows lessened generation of sensorially undesirable factors such as "burnt taste" and has a good body, enriched taste, etc. Thus, the beer has a comprehensively excellent flavor and can provide a new taste as a a luxury drink.
