Abstract:
The invention relates to a method, according to which soft, semi-soft and/or hard cheese containing herbs and/or seasoning can be produced, whereby said method is not dependent on the addition of sterilised dried herbs or seasonings, whose colour and/or flavour is often detrimentally affected during the sterilisation process. The method is characterised in that during the production of soft, semi-soft and/or hard cheese containing seasoning and/or herbs, in which raw milk and/or dairy milk is processed in a conventional cheese-making process, the seasoning and/or herbs is/are added to the raw milk and/or dairy milk as a starting product, or to an intermediate product that is obtained during the cheese-making process, in the form of a preparation that contains at least the herbs and/or seasoning, in addition to water.
