Abstract:
Provided is a method for economically and easily producing soya saponins without crushing seeds or plant bodies or treating with an organic solvent. The method for producing soya saponins comprises: incubating or growing a legume plant body using an aqueous liquid while bringing at least a part of the plant body into contact with the aqueous liquid; and then recovering the aqueous liquid or separating soya saponins from the aqueous liquid.
