Abstract:
Method for flow-line production of sparkling wines by means of deaeration of a white wine blend in the presence of yeasts immobilized on a sorbent. The deaerated white or red wine blend mixed with a liqueur is fed into a champagnization zone and under a layer of a sorbent contained in that zone. The yeasts needed for ensuring the secondary fermentation in the champagnization zone and for enriching the champagnized wine with biologically active substances are adapted to the conditions of the champagnization process. For that purpose, the yeasts are introduced into the champagnization zone, where they are kept for a certain time in isolation from the champagnized wine. After termination of adaptation, the yeasts are mixed with the liqueur and are fed under the layer of the sorbent to ensure the champagnization, the mixture of the blend and of the liqueur being fed to the same point. After champagnization, the champagnized wine is cooled, filtered and sent for bottling.
