Abstract:
A method of producing tomato paste consists in washing the raw material, checking its quality, its disintegration, measuring the temperature of the disintegrated mass and bringing it to a temperature within a range of 10 to 25�C. Then the mass is fed to the treatment zone and is subjected at the same time to an electric current of a density chosen within 0.1 to 2.0 A/cm2. After the treatment with current the mass is warmed up, triturated through a sieve and the vapour is boiled off to obtain the desired concentration. The method provides for changing the voltage at the electrodes depending on the difference in the temperatures measured before and after the treatment of the raw material with electric current or depending on the content of dry substances in the disintegrated mass fed for treatment.
