Abstract:
The invention relates to a method for the production of fresh cereal-flour-based patties, characterized in that it comprises the following steps: (a) cereal-flour-based dough is placed on a conveyor belt consisting of a web of fiber-glass material impregnated with polytetrafluorethylene; (b) the dough is steam-cooked; (c) optionally, the dough cooked in step (b) is placed on a conveyor; (d) optionally, la said dough is cut or pre-cut.
