Abstract:
The object is to develop a technique for sterilizing (completely sterilizing) a thermostable microorganism such as a bacterial spore in a particulate dried protein raw material in a stable manner without causing deterioration in the quality of the raw material, thereby producing a sterile solid protein for food application. Disclosed is a method for production of a sterile solid protein for food application, wherein the method comprises heating a particulate dried protein at 250 to 370˚C (product temperature) for 1 to 15 seconds.
