Abstract:
Disclosed is a method for purifying an edible oil or fat, which enables the reduction in the contents of chlorine compounds each having a relatively low molecular weight, e.g., 3-monochloro-propanediol and ester compounds thereof, in the oil or fat.
Specifically disclosed is a method for purifying an edible oil or fat, which is characterized by involving a step of heating the oil or fat in the presence of water while applying a pressure to the oil or fat, wherein water preferably has a subcritical state upon heating and is preferably contained in an amount of 25 to 400 parts by mass relative to 100 parts by mass of the oil or fat, and the heating step is preferably carried out in a closed container or a flow reactor.
