Abstract:
Purified lactide having a high purity is obtained by bringing crude lactide in a solid state or at least partly molten state into contact with ethanol to give a mixture in the form of a slurry and then separating solid matters from the mixture. Lactide for food additives is obtained by recrystallizing crude lactide from optionally denatured ethanol. Lactide has been used in various food additives. Coagulating agents for animal and/or vegetable proteins which contain optically active lactide as the main component; food foaming agents containing lactide as the main component; food preservatives containing lactide as the main component; and pH regulating agents containing lactide as the main component.
