Abstract:
The present invention provides a method for screening for a flavor material having a marine note. The screening method according to the present invention is a method for screening for a candidate compound having a marine note among from test compounds using an olfactory receptor having responsiveness to a flavor having a marine note, said method comprising the steps of: (i) bringing an olfactory receptor selected from the group consisting of OR10H5, OR10H4, OR10K1, OR2J2 and a protein that comprises an amino acid sequence having 80% or higher identity to an amino acid sequence represented by SEQ ID NO: 2, 4, 6 or 8 and has responsiveness to a flavor having a marine note into contact with a test compound and measuring the response of the olfactory receptor to the test compound; (ii) measuring the response of the olfactory receptor used in step (i) in the absence of the test compound; and (iii) comparing the measurement results obtained in step (i) with the measurement results obtained in step (ii) and selecting a test compound of which the response is changed as the candidate compound having a marine note.
