Abstract:
A method and a system for collecting aroma substances and adding to wine during a fermentation process. The method comprises transporting to a membrane separation device a mixed gas discharged in a fermentation process of wine or a mixed gas obtained by desorbing and stripping a wine fermentation liquid, separating and discharging undesired and harmful substances in the mixed gas, concentrating desired aroma substances, and then using wine as an absorption liquid to absorb the aroma substances in the concentrated mixed gas at a low temperature. The system comprises a fermentation device, a membrane separation device, and an absorption device sequentially connected, and further comprises a stripping fermentation device that can be used for stripping operations.
