Abstract:
A method for manufacturing a frozen milk fat cream including a homogenization step for setting the median diameter of milk fat globules to 3.3-4.0 μm and a cooling step for cooling so that the time required for the temperature to fall from 0°C to -5°C is 9-30 minutes. According to the present invention, a milk fat cream exhibiting both freezing resistance and whipping performance after a freezing and defrosting process, and a method for manufacturing the milk fat cream, are provided.
