Abstract:
It is intended to provide milk powders for confectionery and bakery products which are to be used in the production of confectionery and bakery products to thereby elevate the volume of breads, pancakes, cakes, pies and so on and impart favorable tissue and texture thereto. Namely, milk powders for confectionery and bakery products containing from 4 to 10% by weight of nonprotein nitrogen and from 1 to 20% by weight of ash having a nonprotein nitrogen&sol total nitrogen ratio of 0.5 or less which are obtained by mixing a dairy material containing nonprotein nitrogen with appropriate dairy materials such as whole milk powder, skim milk powder, butter milk powder, whey powder, milk minerals, whey protein concentrate and milk protein concentrate.
