Abstract:
The purpose of the present invention is to provide a method for manufacturing a milk product which enables: photodegradation of fat-soluble vitamins in the milk product to be suppressed without significantly compromising the flavor, texture, and the like, of the milk product; and fat-soluble vitamins to be well absorbed in the body. In this milk product manufacturing method, the content of non-fat milk solids in the milk product, which contains fat-soluble vitamins, is adjusted to at least 3.5% by mass. In other words, the milk product obtained by this manufacturing method contains fat-soluble vitamins and non-fat milk solids. Furthermore, the milk product contains at least 3.5% by mass of non-fat milk solids with respect to the total mass.
