Abstract:
It is intended to provide a novel miso (soybean paste)-type food which has a novel miso-like taste, is widely usable as a food for seasonings and soup materials in Japanese and western style dishes, is nutritionally superior to the traditional miso products and contains a substance having an improved function or a novel function, and a process for producing the same. A process for producing this miso-type food which involves the step of producing a brewed product by brewing materials commonly employed in producing miso while substituting a part thereof by milk and/or a processed milk product. The miso-type food contains this brewed product which is obtained by substituting a part of brewing materials commonly employed in producing miso by milk and/or a processed milk product.
