Abstract:

Claims:
CLAIMS

1. A mobile bakery plant (1) including a platform (110) and baking equipment mounted on said platform (110), characterised in that said baking equipment comprises at least one tunnel oven (135) for baking flat bread, such as pita bread or naan bread.

2. A mobile bakery plant (1) as claimed in claim 1, characterised in that said baking equipment comprises at least one moulder (134) for producing flat lumps of dough.

3. A mobile bakery plant (1) as claimed in claim 1 or 2, characterised in that said at least one tunnel oven (135) comprises a variable speed conveyor onto which said flat lumps of dough are placed.

4. A mobile bakery plant (1) as claimed in any one of claims 1 to 3, characterised in that the discharge end face of said at least one tunnel oven (135) is provided with a bread collector (136).

5. A mobile bakery plant (1) as claimed in claim 4, characterised in that said bread collector (136) is mounted on said tunnel oven (135) in a removable manner.

6. A mobile bakery plant (1) as claimed in any one of claims 1 to 5, characterised in that said platform (110) is mounted on a single axle trailer (11).

7. A mobile bakery plant (1) as claimed in any one of claims 1 to 6, characterised in that said baking equipment is arranged in a box-shaped frame having lateral walls (121, 122) and a roof (123).

8. A mobile bakery plant (1) as claimed in claim 7, characterised in that said lateral walls (121, 122) are adapted to be folded upwardly to extend the roof (123) area.

9. A mobile bakery plant (1) as claimed in claim 7 or 8, characterised in that a canvas cover is arranged on said lateral walls (121, 122) and said roof (123).

10. A mobile bakery plant (1) as claimed in any one of claims 1 to 9, characterised in that it comprises an electrical power generating set (138).

11. A mobile bakery plant (1) as claimed in any one of claims 1 to 10, characterised in that said at least one tunnel oven (135) is mounted above one or more rising chambers (132).

12. A mobile bakery plant (1) as claimed in claim 11, characterised in that said at least one tunnel oven (135) and said one or more rising cham bers (132) are enclosed in a one-piece case.

13. A mobile bakery plant (1) as claimed in any one of claims 1 to 12, characterised in that said at least one tunnel oven (135) is a stone oven.

Description:
Mobile bakery plant for baking flat breads, such as pita or naan breads

1. TECHNICAL FIELD OF THE INVENTION

The present invention relates generally to the field of machines and equipment for making or processing articles made from dough.

The present invention relates more particularly to a mobile bakery plant, or unit.

2. BACKGROUND OF THE INVENTION

Autonomous mobile bakeries are used by armed forces or humanitarian organizations for providing bread to soldiers in the field or to refugees in camps.

The baking equipment (which classically comprises a mixing and kneading machine, a cutting machine, a moulding machine and a baking oven) is disposed in a container, such as a 20-foot container, which is fitted on a double axle trailer.

As an alternative, the baking equipment is set up in a tent.

The type of breads produced by such bakeries are usually round breads or long thin breads known as « baguettes ».

None of the current mobile bakeries are adapted to produce flat breads, such as pita bread, which is widely consumed in Middle Eastern countries for instance, or naan bread, which is eaten in south Asia and the Middle East.

3. BRIEF SUMMARY OF THE INVENTION

The aim of the present invention is to solve the weaknesses of these prior bakery units.

The present invention provides a mobile bakery plant or unit including a platform and baking equipment mounted on said platform.

According to the invention, said baking equipment comprises at least one tunnel oven for baking flat bread, such as pita bread or naan bread.

The invention provides a mobile bakery adapted to produce flat breads, such as pita bread or naan bread.

In order to do so, the mobile bakery comprises a baking tunnel oven, which is usually used to bake pizzas.

Such a mobile bakery is designed to provide the daily needs in bread for hundreds of people, and is specially designed to subsist to the need for pita bread of people in Middle Eastern and Mediterranean countries for instance, or naan bread in Middle Eastern and South Asian countries for instance.

The present invention meets the HACCP standard relative to food safety and may be used :

- by the army for the production of flat breads for troops in the field or during maneuvers, in military bases or camps, in field hospitals, or in isolated sites, or

- by humanitarian organizations for providing flat breads to refugees in camps.

In a preferred embodiment of the present invention, said baking equipment comprises at least one moulder for producing flat lumps of dough.

The mobile bakery also comprises the equipment required for the different steps involved in the process of making flat breads from dough, i.e. kneading, weighing, dividing, moulding, rising and baking.

In one embodiment of the present invention, said at least one tunnel oven comprises a variable speed conveyor onto which said flat lumps of dough are placed.

In another embodiment of the present invention, the discharge end face of said at least one tunnel oven is provided with a bread collector.

In a preferred embodiment of the present invention, said bread collector is mounted on said tunnel oven in a removable manner.

The bread receiver is designed to collect flat breads coming out of the tunnel oven. Such a collector ensures compliance with the strictest hygiene requirements under field conditions and allows the operator to execute other tasks while flat breads are coming out of the oven.

In one embodiment of the present invention, said platform is mounted on a single axle trailer.

The trailered field bakery can be easily towed to a motor vehicle and makes possible bread baking in field conditions.

As an alternative, the bakery platform may be used on the floor and set up in a tent.

The bakery platform can be easily transported on lorries, in railway trucks or by other means of transport, such as in a maritime container.

In a preferred embodiment of the present invention, said baking equipment is arranged in a box-shaped frame having lateral walls and a roof. The mobile bakery is thus compact.

In one em bodiment of the present invention, said lateral walls are adapted to be folded upwardly to extend the roof area.

Having arrived on site, the mobile bakery can be quickly set up for the continuous production of bread.

By com parison with other mobile bakeries, in which the transportable plant com ponents are set up in a tent for instance, such plant as that described above is distingu ished especially by its high degree of mobility and readiness for use, which is a considerable advantage when frequent changes of location are necessary.

In one em bodiment of the present invention, a canvas cover is arranged on said lateral walls and said roof.

In another em bodiment, the lateral walls and the roof are made u p of a rigid material, such as a steel sheet, an aluminium sheet or a stainless-steel sheet.

In a further embodiment, the lateral walls and the roof are made up of light material, such as a polyester film .

In a preferred em bodiment of the present invention, said baking equipment com prises an electrical power generating set.

The bakery is electrically powered, the electric power being provided by a diesel powered generator mounted on the platform .

In a preferred em bodiment of the present invention, said at least one tunnel oven is mounted above one or more rising cham bers.

In one embodiment of the present invention, said at least one tun nel oven and said one or more rising chambers are enclosed in a one-piece case.

Preferably, said at least one tunnel oven is a stone oven.

4. BRIEF DESCRIPTION OF THE DRAWINGS

Other characteristics and advantages of the present invention will emerge from the following detailed description of an em bodiment of the present invention described by way of exam ple. This description will be given in reference to the attached drawings, in which :

FIG. 1, 2 and 4 are perspective views of the mobile bakery un it according to an em bodiment of the invention ;

FIG. 3A is a perspective view of the mobile bakery unit during transport, and FIG. 3B is a perspective view of the mobile bakery unit when it set up.

5. DETAILED DESCRIPTION OF THE INVENTION

Referring specifically to the embod iment illustrated in FIG. 1, 2 and 4, the mobile bakery unit, or plant, 1 comprises a single axle trailer 11 having a sole set of wheels and a box-shaped body 12 having two end walls 121, two lateral walls 122 and a roof 123.

The end walls 121 and lateral walls 122 may be folded u pwardly to extend the roof area of the bakery unit 1. In order to do so, these walls 121, 122 are pivotally mounted on the roof between a substantially vertical lowered position and a substantially horizontal raised position .

The box-shaped body 12 comprises a rectangular-shaped platform (or chassis)

110 supported by the trailer 11. The platform 110 carries a plurality of machines and equipment that are bolted to the platform 110.

The front end of the trailer 11 is provided with a draw bar 111 and a front castor wheel 112 for positioning the trailer 11, and towing, or uncou pling, the latter to a motor vehicle.

Although not illustrated, the trailer 11 is provided with four mechanical jacks or crank support (one at each corner of the platform 110) for levelling the platform 110 and ensu ring that the equipment remains stable in the operating (or working) position of the mobile bakery un it 1.

Each of the foldable end and lateral walls 121, 122 is equipped with two pneumatic jacks for easy manual opening/closing.

Referring now to FIG. 3A, the mobile bakery unit 1 is in a transport configuration, the foldable end and lateral walls 121, 122 being lowered. A flexible canvas or tarpaulin 14A is used to cover the box-shaped body 12.

Referring now to FIG. 3B, the mobile bakery unit 1 is in an operating configuration, the foldable end and lateral walls 121, 122 being in a raised position. A flexible canvas or tarpaulin 14B is also used to cover the box-shaped body 12.

To bring the mobile bakery unit 1 into operation (operating position), the canvas 14 is removed and the end and lateral walls 121, 122 are swung up.

In the illustrated em bodiment, the walls 121, 122 and the roof 123 consist of a frame. In an alternative em bodiment, the walls 121, 122 and the roof 123 may each consist of a solid panel. As mentioned previously, the platform 110 carries several machines and equipment for the production of bakery products, in particular flat breads, such as pita bread or naan bread. In the illustrated embodiment, the platform 110 carries :

- a spiral dough mixer/kneader 131 for dough preparation connected to a water supply and mounted on the left side of the platform 110 ;

- a dough divider-rounder 133 mounted on the right side of the platform 110 which is extremely easy to use. This machine is able to cut and round about 800 dough pieces per hour, each piece weighing from 150 to 320 grams ;

- a moulder 134 mounted at the rear of the platform 110 and designed to produce flat dough pieces ;

- one or more rising chambers 132 (ensuring fermentation of the flat dough pieces) mounted at the front of the platform 110, and

- a baking oven 135 mounted at the front of the platform 110 above the rising chambers 132 : the baking oven 135 is an electric tunnel oven with an attached basket 136 for collecting pita breads or naan breads, the speed of the belt/conveyor being adjustable.

The baking oven 135 and the one or more rising chambers 132 may be enclosed in a one-piece case, which is bolted to the platform 110, the baking oven 135 being located above the one or more, rising chambers 132. The compact one-piece case may also comprise a bread-collecting basket 136. The use of such multi-function equipment simplifies the mounting of the baking equipment on the platform and meets the HACCP approach relative to food safety.

The baking oven 135 is preferably an electric tunnel stone oven, in particular a refractory stone furnace that provides heat continuously.

In order to bake flat breads, such as pita breads or naan breads, the dough is mixed and is removed by an operator from the mixer 131 to be fed into the divider- rounder 133 for division into lumps of uniform size and weight, such lumps being given a preliminary shape. Such lumps are then fed into the moulder 134 which forms each lump into a sheet (round flattened dough) of proper size

The flattened lumps of dough are then placed in a rising chamber 132 for a period of fermentation, and are conveyed and baked in the baking oven 135, the latter comprises a cooking tunnel with a variable speed conveyor. The discharge end face of the oven is provided with a removable collector (basket 136).

The equipment fitted the platform 110 may also comprise a water reservoir/tank, a digital electronic weighing device, a movable working table 137 used for manual moulding of the dough, a set of lights fixed under the roof 123, and a generating set 138 (a diesel generator for instance) with a starting battery located in a waterproof compartment providing the electrical power needed for the operation of the bakery unit 1.

The production capacity of the mobile bakery unit 1 is 110 to 150 breads per hour.

The mobile bakery unit 1 is dimensioned so that three bakery units of this type may be packaged in a 40-foot maritime container.

When the mobile bakery unit 1 is closed (transport configuration), the mobile bakery unit 1 has a length of 4282 mm, a width of 2070 mm, and a height of 2530 mm When the sides of the mobile bakery unit 1 are opened (working configuration), the mobile bakery unit 1 has a length of 5464 mm (tow bar included), a width of 4500 mm, and a height of 2530 mm.

In an alternative embodiment, the platform 110 and the baking equipment may be transported on a van or on a lorry, or air-lifted to the site by helicopter where it can be set up quickly.
