Abstract:
The subject matter of the present specification relates to a multiple emulsion composition comprising three or more phases, wherein two adjacent phases have opposite charges. In the composition, an interface is stabilized by the interaction between charges caused by the opposite charges of adjacent phases, and thus an aggregation, fusion, or creaming phenomenon of emulsion particles can be prevented in the multiple emulsion composition.
