Abstract:
The purpose of the present invention is to provide a mushroom extract, and a taste improving agent, which do not have the characteristic smell of existing mushroom extracts, and can impart an excellent taste improving property to various types of food and drink. The present invention pertains to a mushroom extract, and a taste improving agent which are obtained by a production process that includes: a step for solvent extraction of at least one from among a mushroom of the genus Boletus, and a mushroom of the genus Amanita Pers.; and a step for removal of a smell component from the solvent extract.
