Abstract:
A novel alpha-amylase excellent in acid and heat resistances, which is produced by a microorganism of the genus Bacillus licheniformis alpha and is capable of liquefying corn starch under an acidic condition of pH 4.0-5.5 at a temperature of 90-110 �C. Furthermore glucose can be obtained in a high yield by saccharifying corn starch with glycoamylase without adjusting the pH value.
