Abstract:
Provided are nanoparticles for addition to a food product, the nanoparticles contain an emulsifier and a dispersant, and a biologically active substance is encapsulated in the nanoparticles. The D50 value of the nanoparticles is 200 nm or less. The span value of the particle diameter of the nanoparticles is 2.0 or less. The content of the biologically active substance is 30 wt% or more relative to the weight of the nanoparticles.
