Abstract:
Provided are a pasteurized natural cheese, in which lactic acid bacteria sustain a high viable cell count even after prolonged storage, and a method for producing the same.
A pasteurized natural cheese, in which lactic acid bacteria survive to give a high viable cell count even after prolonged storage and which shows little change in flavor due to maturation or acid formation, can be obtained by mixing starting materials, heat pasteurizing the resultant mixture to thereby inactivate microorganisms and enzymes originating from the starting materials, then cooling the mixture to such an extent that lactic acid bacteria having hygienic effects therein are not killed, adding lactic acid bacteria thereto, and mixing.
