Abstract:

A green edible coating comprises Gardenia Blue pigment and vitamin B2 (derivatives).This edible coating has a color shade h of at least 90 at the CIELAB color scale and preferably also a color value b* of at least 10 at the CIELAB color scale. This edible coating is preferably used for coating confectionary such as chocolate lentils. The present invention is also directed to precursors of such green edible coatings such as sugar syrup and sugar-free alternatives, both comprising Gardenia Blue pigment and Vitamin B2 (derivatives).
