Abstract:
The present invention relates to a Bacillus subtilis EE5 strain useful for the production of natto with a high content of polyamine, a culture fermented with the same, and a method for producing polyamine by using the same. The Bacillus subtilis EE5 strain of the present invention can be usefully used as a means by which functional natto with a high content of polyamine, a food of high organoleptic quality, can be economically and efficiently provided in the field requiring polyamine-rich functional foods.
