Abstract:
The problem to be solved by the present invention is to provide a β-glucosidase, which has enzyme activity to sever the β-1,2-glucoside bond of sesaminol glycoside and which controls enzyme activity to produce sesaminol by severing the β-1,6-glucoside bond of 6-sesaminol diglucoside and the β-glucoside bond of sesaminol-glucose. The present invention provides a peptide: which has either an amino acid sequence shown by Sequence No. 2 or an amino acid sequence where one or several amino acids in the amino acid sequence shown by Sequence No. 2 have been deleted, substituted or added; which has enzyme activity to severe the β-1,2-glucoside bond of sesaminol glycoside; and in which controlled is enzyme activity that produce sesaminol by severing the β-1,6-glucoside bond of 6-sesaminol diglucoside and the β-glucoside bond of sesaminol-glucose.
