Abstract:
A roll-in margarine in which: the content of trans-fatty acids relative to all constituent fatty acids in the roll-in margarine is 4 wt% or less; the roll-in margarine contains, with respect to the entire roll-in margarine, 5-10 wt% of water, 3-10 wt% of cacao butter, 25-80 wt% of fats other than cacao butter, 5-27 wt% of non-fat cacao, and 5-40 wt% of sugar, and furthermore contains, with respect to all fats in the roll-in margarine, 3-50 wt% of SSU, 20-50 wt% of UUU, and 2-20 wt% of at least C48 tri-saturated triglycerides; C48 tri-saturated triglyceride content/at least C48 tri-saturated triglyceride content (weight ratio) is 0.2-0.9; and SSU/SUS (weight ratio) is 0.7-1.4. It is thereby possible to provide a roll-in margarine low in trans-fatty acids, the roll-in margarine: having a high cacao mass content and cacao powder content; being formable even with a low water content; exhibiting physical properties that prevent hardening over time; having good producibility due to the minimized leakage at seal portions in a scraping machine; having good extensibility during pullout; and imparting excellent chocolate flavor, sweetness, and melt-in-the-mouth properties when used in a layered puffed foodstuff; and to provide a layered puffed food product obtained using the roll-in margarine.
