Abstract:
A roll-in margarine wherein: the content of trans-fatty acids is 5 wt% or less in the total amount of the all constituent fatty acids of fats and oils; the content of S is 25-70 wt%; the ratio by weight of the content of P to the content of S (P/S) is 0.6 to 1; in the all fats and oils, the content of ester exchange oils is 10 wt% or less; in the all triglycerides in the fats and oils, the amount of SSS is 10 to 20 wt% and the amount of SUS is 15 to 50 wt%; and the ratio by weight of the content of SSU to the content of SUS (SSU/SUS) is 0.1 to 1. This roll-in margarine is obtained by cooling starting materials at a temperature lower by 20 to 40oC than the melting point of the oily phase part, kneading, tempering at 15 to 30oC for 10 to 100 hours and then allowing to stand at -30 to -25oC for 24 hours or longer.
