Abstract:
Provided is a novel sophorolipid (SL) that can be applied in a wide range of fields such as beverages, cosmetics, drugs, and quasi-drugs. This sophrolipid compound is represented by formula (I) (in formula (I), R1 represents H or a methyl group; R3 and R4 represent H or an acetyl group; one of the five R5 is a saturated fatty acid residue that can comprise an OH group or an unsaturated fatty acid residue that can comprise an OH group, with the remaining four being H; R2 represents an alkylene group with a carbon number in the range 9-18 or an alkenylene group with a carbon number in the range 9-18 that has one to three double bonds; and R6 represents a hydroxyl group. Moreover, R6 may be unified with any one of the five R7 in a compound represented by formula (II) to form a single bond) (in formula (II), R1' represents H or a methyl group; R3' and R4' represent H or an acetyl group; and R2' represents an alkylene group with a carbon number in the range 9-18 or an alkenylene group with a carbon number in the range 9-18 that has one to three double bonds).
