Abstract:
[Problem] To obtain a heretofore unknown starch. [Solution] This starch has a gelatinization start temperature of 70°C or greater, a number average particle diameter of 2-3 μm, and an amylose content of 30-50%. In particular, the starch is derived from duckweed. The duckweed is one or more species of duckweed, selected from the group consisting of Wolffia globosa, Lemna minor, Spirodela polyrhiza, Azolla pinnata, Eichhornia crassipes, Pistia stratiotes, Egeria densa, Elodea nuttallii, Myriophyllum aquaticum and Salvinia natans.
