Abstract:
Disclosed is an oil-and-fat composition comprising an oil-and-fat (A), an oil-and-fat (B), an oil-and-fat (D) and an oil-and-fat (E) as an optional component, wherein the oil-and-fat (A) is an oil-and-fat such as a lauric-type oil-and-fat, the oil-and-fat (B) is an interesterified oil of an oil-and-fat (C) having a content of a saturated fatty acid having 16 or more carbon atoms and a content of an unsaturated fatty acid having 16 or more carbon atoms both falling within specified ranges, the oil-and-fat (D) is an oil-and-fat containing a X-O-X type triacylglycerol in an amount of 30 mass% or more, and the oil-and-fat (E) is an oil-and-fat component derived from a plant oil-and-fat which is different from any one of the oil-and-fat (A), the oil-and-fat (B) and the oil-and-fat (D). The oil-and-fat composition meets the following requirements (a) to (c): (a) the content of the oil-and-fat (A) is 1 to 4 mass%; (b) the content of the oil-and-fat (B) is 10 to 20 mass%, and (c) the content of the X-O-X type triacylglycerol is not less than 40 mass% and less than 60 mass%, wherein the all of the contents are relative to the total amount of the oil-and-fat components derived from plant oils-and-fats. Also disclosed is an oil-in-water emulsion comprising the oil-and-fat composition.
