Abstract:
Provided is an oil and fat composition. When determined by the German Society for Fat Science (DGF) standard method C-III 18(09), the oil and fat composition has an MCPD-FS content (ppm) of 5 ppm or less, a diacylglycerol content of 5 mass% or greater, and a monoacylglcyerol content of 1 to 35 mass%. The oil and fat composition is a composition that has been subjected to a deodorization treatment.
