Abstract:
[Problem] To provide an oil or fat composition which is appropriate as an oil or fat to be used in instant cooked foods. [Solution] An oil or fat composition comprising: (A) 50-65 wt% of at least one kind of oil or fat selected from the group consisting of a fractionated palm oil that is obtained by decoloring a fractionated palm oil, said fractionated palm oil having an iodine value of 18 or lower, once or more at a temperature lower than 100oC or twice or more at 100oC or higher, an olein fraction obtained by fractionating palm stearin, an olein fraction obtained by fractionating palm double stearin and an olein fraction obtained by fractionating palm triple stearin; and (B) 30 wt% or more of an interesterified oil containing 90 wt% or more of saturated fatty acid(s) and 20-35 wt% of saturated fatty acid(s) having 12 or less carbon atoms.
