Abstract:
An oil and fat state measuring device (1) is provided with a measuring unit (31) which measures an acid value of oil or fat on the basis of at least two of an R value, a G value and a B value of light in the visible light region that has passed through the oil or fat. The measuring unit (31) preferably measures the acid value on the basis of a maximum color difference calculated from the difference between the value indicating the minimum value and the value indicating the maximum value from among the R value, the G value and the B value.
