Abstract:
Provided is an oil-in-water emulsion composition that: includes a fatty acid ester of vitamin C and a diacylglycerol-containing fat that includes an abundance of α-linolenic acid; and has high oxidation stability but also has less of a fishy or off odor. An oil-in-water emulsion composition that contains components (A), (B), and (C): (A) a fat that contains at least 15 mass% diacylglycerol and at least 15 mass% α-linolenic acid in fatty acid constituting the fat; (B) 0.020–1.0 mass% fatty acid ester of vitamin C relative to component (A); and (C) 0.15–6.0 mass% hydroxy acid or a salt thereof.
