Abstract:
Disclosed is a semi-solid oil-in-water type emulsion seasoning which can be molten and spread over the surface of a food properly by applying the seasoning on the food and subsequently heating the food to form a topping that is hardly detached after cooling. The oil-in-water type emulsion seasoning has an aqueous phase comprising a first thickening agent and a second thickening agent. When an aqueous 1 wt% dispersion of the first thickening agent is heated to 55˚C and subsequently cooled to 20˚C, the viscosity of the aqueous dispersion becomes less than 80% of a viscosity that is achieved by heating the aqueous dispersion to 90˚C and subsequently cooling the aqueous dispersion to 20˚C. An aqueous 2% solution of the second thickening agent can form a gel at 5˚C. The gel is a thermoplastic gel.
